Ingredients
  

  • 2 lbs 900g Yukon Gold potatoes, peeled and cubed
  • 3 large eggs hard-boiled and chopped
  • 1 cup mayonnaise use full-fat for creaminess
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely diced
  • 1/4 cup dill pickles chopped
  • 2 tbsp fresh dill chopped (or 1 tsp dried dill)
  • Salt and black pepper to taste
  • Paprika for garnish (optional)

Instructions
 

  • Cook the Potatoes (10 minutes)
  • Place cubed potatoes in a large pot of salted water. Bring to a boil and cook for 10–12 minutes until fork-tender. Drain and let cool slightly.
  • Prepare the Dressing (5 minutes)
  • In a large bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
  • Combine Ingredients (5 minutes)
  • Add cooled potatoes, chopped eggs, celery, red onion, dill pickles, and fresh dill to the dressing. Gently toss to coat evenly.
  • Chill and Serve (10 minutes)
  • Cover and refrigerate for at least 10 minutes to let flavors meld. Garnish with paprika before serving, if desired.
